Kikaijima Raw Sugar
Kikaijima is an uplifted coral reef island located about 380 km south of Kagoshima and 25 km east of Amami Oshima. In 2009, it was recognized as the "Most Beautiful Villages in Japan." The island is characterized by its lack of mountains and rivers, with residents relying on carefully stored groundwater for their daily needs.
Sugarcane is cultivated on Kikaijima in harmony with the environment, ensuring that the natural landscape and precious groundwater remain unpolluted. The island's soil, rich in minerals and made up of uplifted coral, is alkaline, giving the sugarcane a unique, umami-rich flavor. Locals describe it as "sugar that doesn't need mirin"—a testament to its depth of taste. This raw sugar enhances the flavor of stews and pairs beautifully with a variety of dishes, as well as coffee and tea.
