nini Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose)
Aged & Fermented Pomegranate Jelly (with Fig & Damask Rose)
Supporting adult beauty and health from within: Pomegranate, fig, and Damask rose - miraculous fruits born in Persia, matured and fermented using traditional Japanese techniques.
Applying the technology of the functional food Jukusei Hakkou Zakuro Paste!
What is Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose)?
Launched in 2024, nini's Aged Fermented Zakuro Paste is a nutritional supplement that combines delicious taste with health support, using only Persian pomegranates and dates as ingredients and employing Japanese fermentation technology to create a product without any additives. Pomegranates and dates, rich in nutrients such as ellagic acid and minerals, are known as "miracle fruits" and have supported the beauty and health of the Persian people since ancient times.
Further applying this maturation and fermentation technology, in 2025, we at nini developed Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose), which harmonizes matured and fermented pomegranate and fig with the natural fragrance and components of Damask rose*1 . Persian Maras pomegranates, black figs, and yellow figs are carefully matured and fermented in Japan, and then finished into a soft, smooth stick jelly using agar.
Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose) is sugar-free, just like the aged fermented pomegranate paste. Using nini's unique technology, this inner care jelly*2 allows the tartness of pomegranate, the gentle sweetness of fig, and the lingering fragrance of Damask rose to melt into your body and mind.

Pomegranate – A miraculous fruit born in Persia
Just like the Jukusei Hakkou Zakuto Paste that spearheaded the pomegranate boom, the pomegranates used are Maras pomegranates from Saveh, Persia. Maras pomegranates, which have been called the "miracle fruit" since ancient times, contain a high concentration of the polyphenol "ellagic acid," while being characterized by their mild bitterness, elegant acidity, and rich aroma.
Grown at an altitude of 1,600m in a harsh natural environment, Maras pomegranates have large fruits, and even the seeds are delicious to eat. These pomegranates are considered to be of the highest quality in terms of taste, aroma, and nutritional value.
The most distinctive feature of pomegranates is their abundant polyphenol content. They contain high concentrations of powerful antioxidants such as ellagic acid, punicalagin, and punicalin. Research on pomegranate polyphenols is being conducted worldwide, and in recent years, prebiotic effects that maintain the survival of bifidobacteria have been reported.
Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose) successfully brings out the crisp acidity of Maras pomegranates in a mellow way through fermentation, without compromising the high concentration of polyphenols in the fruit.
Main components of pomegranate
Vitamin B₁, Vitamin B₂, Vitamin C, Niacin, Amino acids, Potassium, Copper, Iron, Zinc, Citric acid, Polyphenols (Ellagic acid, Punicalagin, Punicalin, Tannin, Anthocyanin, Resveratrol)
Figs – A gentle sweetness and rich nutrition created by the harmony of black and yellow
In Persia, figs, along with pomegranates and dates, have been cherished since ancient times and are known as the "miracle fruit." We at nini have carefully selected two varieties from the many types of figs available: black figs and yellow figs.
Black figs are characterized by their rich, deep sweetness and the high content of anthocyanins, a type of polyphenol, in their skin.
Yellow figs have a lighter sweetness and contain a balanced amount of pectin and minerals such as potassium, calcium, and iron. Growing in the dry environment of the Persian plateau, with its large temperature differences between day and night, and with deep roots, they accumulate plenty of these nutrients.
Two types of wild figs, each with a different sweetness and delicate fruity aroma, and rich in nutrients, are blended in an exquisite ratio through extensive research, resulting in a product that offers depth of flavor while maintaining excellent nutritional balance.
Main components of figs
Carbohydrates, pectin (water-soluble dietary fiber), anthocyanins (black figs), sodium, potassium, magnesium, iron, phosphorus, zinc
Damask Rose – The "Queen of Fragrances" that fills the soul
The Damask rose, native to the Kashan region of central Iran, blooms only once a year, for a mere month in May. Growing in a plateau region at an altitude of approximately 2,700 meters, with large temperature fluctuations between day and night, and enduring long winters and a dry climate, it develops deep roots and absorbs only minimal water, resulting in a remarkably strong vitality and an exceptionally rich fragrance.
The petals, hand-picked before dawn, are carefully extracted using traditional steam distillation methods to release rich aromatic compounds such as citronellol and geraniol. Only 1 kg of this rare fragrance can be obtained from approximately 15 tons of petals, and it has long been revered as the "Queen of Fragrances." Furthermore, damask roses used for food are rich in beneficial beauty ingredients such as polyphenols and vitamins C and E.
The culture of rosewater and nini's commitment
In Persia, rosewater is a common beverage. Beyond enjoying the elegant fragrance of Damask roses, drinking it provides vitamins and polyphenols, fostering a habit of harmonizing mind and body.
On the other hand, the culture of eating roses is not very widespread in Japan. Therefore, nini uses rose water as a natural fragrance in its jellies so that people can easily try the scent and beauty benefits of Damask roses.
Instead of using artificial flavorings, we aimed to create a "natural rose experience you can eat" that you can enjoy every day by blending ingredients to gently harmonize with the flavors of fruit and fermentation.
Main components of Damask rose
Vitamin C, Vitamin E, dietary fiber, polyphenols
Agar-agar – a soluble dietary fiber that's good for your stomach
Agar-agar is a natural food derived from seaweed. Over 80% of it is composed of soluble dietary fiber, which is believed to support beneficial bacteria in the gut. Furthermore, because it is low in calories, fat, and has a low glycemic index, it is also recommended as a dessert for those on a diet.
Taking advantage of its ability to be processed into a jelly-like consistency, nini achieves portability, ease of consumption, and a balance of deliciousness and functionality. Its unique inner care design preserves the flavors of fruit and Damask rose, offering a pleasant elasticity and elegant taste.
Applying the wisdom of Japanese fermentation culture to fruits
In Japan, a fermentation culture is deeply rooted, where ingredients are matured to bring out their flavor and nutrients, as seen in miso, soy sauce, and amazake. Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose) is designed around the idea of "maximizing the benefits of change without destroying the ingredients," by fusing the miraculous fruit born in Persia with Japanese fermentation philosophy. Rather than artificially adding sweetness, the value inherent in the fruit is brought out through a time-consuming maturation process. That is nini's choice of fermentation.
The choice to "ripen the fruit itself without relying on sugar or additives."
nini, which prioritizes health above all else, has chosen the natural sweetness and flavor created by fermenting fruit, rather than sweetening with sugar or additives. Fermentation alters the balance of sugars and organic acids within the fruit, softening the acidity and increasing the nutritional value along with a gentle sweetness. Another feature of Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose) is that, as a fermented food, it supports beneficial bacteria in the gut.
Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose) aims to shift the perception of those who value beauty and health from "sweet = guilt" to "sweet = balance."
Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose) utilizes nini's unique fermentation technology (patent pending) that matures pomegranates and figs without adding any sugar. By fermenting while making use of the sugars, organic acids, and minerals naturally present in the fruit, it is possible to bring out a natural sweetness and deep flavor without relying on unnecessary additives. Through this process, polyphenols and pectin derived from the fruit are transformed into a mellow taste and a form that is easily absorbed by the body through synergistic effects with fermentation.
Changes brought about by fermentation are not limited to just "taste".
After fermentation, the pomegranate's acidity softens, and the fig's sweetness lingers, creating a gentle flavor. Furthermore, the aroma of Damask rose harmonizes with the mellow tones of the fermented fruit, resulting in a well-balanced taste.
Rather than simply "eating sweet jelly," it's a feeling of being "enveloped in the rich flavor of fruit" —that's the unique flavor of "aged fermented pomegranate jelly (pomegranate, fig, and damask rose)" perfected through fermentation.
A new form of inner care: Jukusei Hakkou Zakuro Jelly
The nutrients of pomegranate and fig are transformed into an easily digestible form through maturation. nini uses fermentation technology to achieve both gentleness on the body and delicious taste, and to realize "sustainability for beauty and health" that is close to your daily life. The fermentation process is not just a manufacturing method, but a reflection of nini's desire for the beauty and health of its customers.
The reason why Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose) is chosen.

3. Maximizing the power of fruit with a patent - pending aging and fermentation technology.
Nini's unique technology, which allows fermentation to be achieved using only fruit, enhances the potential of pomegranate and fig while making it possible to choose a product without sugar or additives.
4. A safe manufacturing method based on Japanese fermentation technology.
Applying traditional Japanese fermentation techniques that "enhance the flavor through maturation and bring out the best in the ingredients," such as those used in miso and amazake, this product is carefully made through a process that nurtures the nutrients of the fruit.
5. It's delicious, so you can continue without any difficulty.

It has a springy texture yet is easy to bite through, and gently melts in your mouth. As you chew, the sweet and sour taste of the fruit and the aroma of Damask rose spread, making it a delicious "dessert-like inner care jelly" that can be enjoyed chilled or at room temperature.
Selection criteria for raw materials, primarily focusing on pesticide-free Maras pomegranates from Persia.
The pomegranates used in our Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose) are Maras variety from Saveh, Persia. Grown in a high-altitude environment with strong sunlight and significant diurnal temperature differences, the fruit is said to develop a concentrated flavor and high levels of polyphenols. The black and yellow figs and Damask roses are also carefully selected from Persia. All ingredients are selected based on the criteria of being "pesticide-free" and "suitable for fermentation."
Quality verification by a third-party organization, including testing for pesticide residues, heavy metals, and microorganisms.
Before use, ingredients such as pomegranates and figs are rigorously tested to ensure they meet safety standards for residual pesticides, heavy metals, and microorganisms. Furthermore, analysis is conducted by third-party organizations as needed, and only ingredients that meet these standards are used. This process is considered crucial because the product is intended for daily consumption as a nutritional supplement.
Manufactured entirely within Japan under a controlled system, from fermentation to filling.
The entire process, from fermentation to filling and packaging, is carried out under a management system that adheres to hygiene standards in Japan. In particular, the patent-pending technology that enables fermentation using only fruit without the use of sugar requires meticulous control over changes in components and hygiene risks, and the safety and reproducibility of this process are ensured.
Reliability as a "nutritional supplement" in the food classification.
Jukusei Hakkou Zakuro Jelly (Pomegranate, Fig, & Damask Rose) is not a medicine, but a nutritional supplement that supports beauty and health. It can be easily and deliciously consumed by people of all ages and genders.
