This is organic JAS-certified Black Bean Paste (douchijiang), a versatile seasoning that brings a deep, authentic Chinese flavor.

Black Bean Paste (Douchijiang) is a classic Chinese seasoning, essential for stir-fried vegetables and mapo tofu. Douchi is made by fermenting black beans, similar in size to small natto beans, with salt and then removing the moisture. This process gives it a balanced saltiness along with richness and depth of flavor.

Douchijiang is similar in taste to Japanese Hatcho miso, as both are made through the fermentation of beans. It is not spicy, making it suitable for a variety of dishes, even in households with children, so the whole family can enjoy it together.

We are particular about the ingredients and manufacturing process, using organic black beans, organic cane sugar, sea salt sun-dried in unpolluted waters, organic shiitake mushrooms, and kelp, all prepared using traditional methods.
