Rare Flake Salt*: A Traditional Sun-Dried Delight

This fine-grained flake salt is distinguished by its unique umami and sweetness, produced through two key processes: a beach-type salt field (for concentrating seawater) and a sun-dried salt field (for crystallizing salt).

In Nghe An Province, located in the north-central region of Vietnam, salt artisans harvest salt on sunny days between March and October, relying solely on the natural forces of wind and sunlight. First, in the traditional beach-type salt field—an ancient technique that flourished in Japan for around 300 years, from the early Edo period to the mid-20th century—seawater is drawn onto sand in the salt field by capillary action, creating salt-adhered sand through sun-drying. This sand is then collected and placed in a marsh, where seawater is concentrated by adding more seawater to the mix. The concentrated seawater is carefully poured into shallow crystallization fields, where it is left to dry in small quantities (just a few centimeters deep) that will crystallize in a day. By evening, soft crystalline salt is formed, which is then stored in a stone storehouse and dried in the sun to produce the traditional sun-dried salt, with its distinctive umami and sweetness.

* Flake salt has a large surface area, which enables it to dissolve quickly despite its seemingly large grain size. Its expansive surface area allows it to easily adhere to food, making it ideal for some creative uses. For example, it can effortlessly stick to the fins of grilled fish as a decorative touch, enhancing the dish with a beautiful finish. Although it contains a notable amount of "bittern," the large grain size makes it easy to handle, making it perfect for grilled fish, rice balls, and other dishes. When used as table salt, it adheres well to ingredients, making it an excellent choice for salads, tempura, steaks, and more. Its ability to dissolve rapidly and blend seamlessly with other ingredients makes it ideal for fine adjustments to flavor.
